Dropping the huge host of ritual law, and kosher in particular, was alarming to Jews who didn't have the benefit of divine visions. That was just the stuff in Moses. The Talmud added another layer on top, mixing it with an even harder insistence that it was demanded by God eternally, not conditionally. Yeah, they choked on that. A great many Jews coming to Christ just could not let it go.
